I do like the warmer weather. I also love salads, but I can make some pretty unhealthy, indulgent salads. This was a quick Greek Style Salad I rustled up and ate for dinner tonight. The ingredients are very simple.
Diced Cucumber
Diced Tomato
Sliced Red Onion
Diced Feta Cheese
Black Olives
A drizzle of Olive oil and a sprinkle of ground black pepper
(I would have like red pepper but I didn't have any, I should have added more red onion and I wish the tomatoes and cucumber were juicy homegrowns). It was very tasty and I also ate it with a bit of Mackerel. I need oily fish as I think my brain cells need replenishing. I am forty now after all!
